Mushrooms aren’t technically vegetables, but they are packed with nutrients! One portabella mushroom contains more potassium than a banana or glass of orange juice. They are also a great source of selenium as well as three B vitamins: riboflavin, niacin, and pantothenic acid.

This delicious, nutrient dense recipe can be made using a variety of mushrooms – portabella, shiitake, oyster, chanterelle, crimini or porcini. Each type of mushroom has it’s own unique flavor the mushroom to your liking.
